I get blank stares in all the bakeries when I ask for Beignets. I'm so grateful to have found this mix because nobody makes these around here. At first, they came out flat and sad looking, but after I increased the thickness slightly (1/4 inch) and cooked them at a higher temperature (med high on stove top) they came out grand. They really do taste like the ones in the French Quarter.

So you might as well order six in the first place. Yes, but this is for 6 boxes. Go get it. This is hands down one of the best treats. $27.54+17.75 S/H=45.49On the Cafe Du Monde website 6 boxes = $14.70+43.50 S/H =58.20So with amazon you are saving $12.71And believe me, you can't just order one box. Because after you eat the first one, you want to eat another box and then give some to your family or friends.
This taste really really really really good but don't pay this much i was tempted to leave 1 star for the price (OUTRAGOUS) but as the other reviewer stated go on the website I did and bought 5 boxes for $12.00 and shipping $11.00(UPS).
First time I've ever had them puff up perfectly like at Cafe du Monde, light and fluffy like little pillows with one inch vertical rise. I started test frying them at 320-340 degrees, but finally got the best result at higher temperature of 380-400. Good luck. After several dismal failures using a pot on the stove, I finally had great success after firing up the big turkey fryer kettle/propane burner in the driveway, using about 8 inches of peanut oil. Taking advice of others - refrigerate the dough for several hours, and then make sure you roll out the dough to EXACTLY 1/8th inch thickness like the instructions say, about the same as a piece of corrugated cardboard - no thinner (don't puff up and turn out like cookies) and no thicker (too heavy, flat and thick - like they serve at the Cafe Beignet and some other places).
